This Crockpot French Onion Beefloaf is a savory, slow-cooked comfort food favorite packed with caramelized onions, juicy ground beef, and topped with melty Swiss cheese. A cozy, set-it-and-forget-it dinner perfect for weeknights or gatherings.

Ingredients

  • For the Beefloaf:
  • Ground beef
  • Breadcrumbs
  • Grated Parmesan cheese
  • Whole milk
  • Large eggs
  • Worcestershire sauce
  • Fine sea salt
  • Freshly ground black pepper
  • For the Topping:
  • Yellow onions, sliced
  • Unsalted butter
  • Beef broth
  • Swiss cheese slices

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire, salt, and pepper until just combined.
  2. Form into a loaf that fits your slow cooker. Avoid overpacking.
  3. In a skillet, cook sliced onions in butter over medium heat for about 20 minutes until golden and caramelized.
  4. Add beef broth to the pan and simmer for 2 minutes, scraping up any browned bits.
  5. Spoon the onion mixture over the meatloaf in the crockpot.
  6. Cover and cook on low for 6–8 hours until fully cooked through.
  7. Top with Swiss cheese slices, cover, and let melt for about 10 minutes.
  8. Slice and serve warm with extra onions spooned over each piece.

Notes

  • Don’t overmix the meat—light handling keeps it tender.
  • Gruyère, provolone, or mozzarella can be used in place of Swiss.
  • Add balsamic vinegar to onions for extra depth.
  • Let the loaf rest before slicing to retain moisture.
  • Great for meal prep and freezer-friendly.
