Crispy Zucchini Chips are a guilt-free, crunchy snack made with just zucchini, olive oil, and salt. Baked or air fried to perfection, these low-carb chips are deliciously crisp, naturally gluten-free, and totally addictive. The perfect healthy alternative to traditional potato chips!

Ingredients

  • 1 large zucchini
  • Olive oil
  • Salt
  • Optional: Garlic powder, paprika, red pepper flakes, ranch seasoning, parmesan cheese, cayenne, Cajun seasoning
  • Mandoline slicer
  • Parchment paper

Instructions

  1. Oven Method:
  2. Preheat oven to 225°F (107°C) and line a baking sheet with parchment paper.
  3. Thinly slice zucchini using a mandoline slicer for even rounds.
  4. Toss slices in olive oil, season with salt and any optional spices.
  5. Lay slices in a single layer on the baking sheet. Bake for 2 hours, flipping halfway.
  6. Let chips cool for a few minutes to crisp up fully before serving.
  7. Air Fryer Method:
  8. Set air fryer to 350°F (175°C).
  9. Oil and season zucchini slices, then place in a single layer in the air fryer basket.
  10. Cook for 8–10 minutes, flipping halfway, until golden and crispy.

Notes

  • Slice zucchini thinly for best crisp texture.
  • Avoid overcrowding to prevent steaming.
  • Optional toppings like parmesan or ranch seasoning add bold flavor.
  • Store in an airtight container; re-crisp in the air fryer if needed.
