Crispy herbed sweet potatoes roasted until golden and tender, served with a creamy garlic lemon aioli for a bright, savory, and comforting dish.

Ingredients

  • 2 large sweet potatoes, peeled and cut into cubes or wedges
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp paprika
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 cup mayonnaise
  • 1 clove fresh garlic, finely minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss sweet potatoes with olive oil, garlic powder, thyme, rosemary, paprika, salt, and black pepper.
  3. Spread sweet potatoes in a single layer on the baking sheet.
  4. Roast for 30 minutes, flipping halfway through, until crispy and golden.
  5. While the potatoes roast, combine mayonnaise, minced garlic, lemon juice, and lemon zest in a bowl.
  6. Mix the aioli until smooth and adjust seasoning to taste.
  7. Serve sweet potatoes warm with garlic lemon aioli on the side or drizzled on top.

  • Fresh herbs can be used instead of dried.
