These Crispy Herb Roast Potatoes are golden on the outside, fluffy inside, and packed with savory herbs and garlic—an easy and irresistible side dish for any occasion.

Ingredients

  • 2 lbs baby potatoes or Yukon Gold potatoes, halved or quartered
  • 3 tbsp olive oil
  • 1 tbsp fresh rosemary (or 1 tsp dried)
  • 1 tbsp fresh thyme or parsley, chopped
  • 3 cloves garlic, minced (or whole cloves)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp paprika or 1 tsp lemon zest

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Scrub and cut potatoes into even-sized pieces. Pat them dry well.
  3. Toss potatoes in a large bowl with olive oil, herbs, garlic, salt, and pepper.
  4. Spread in a single layer on baking sheet, cut side down.
  5. Roast for 35–40 minutes, flipping halfway, until crispy and golden.
  6. Garnish with fresh herbs or flaky sea salt before serving.
