Ingredients

  • 2 large eggs
  • 1/4 cup crumbled feta cheese (full-fat recommended)
  • 1 tablespoon olive oil or butter
  • Black pepper, to taste
  • Chili flakes (optional)
  • Fresh herbs for topping (optional, e.g., parsley or dill)

Instructions

  1. Heat a nonstick or cast-iron skillet over medium heat and add olive oil or butter.
  2. Scatter the feta cheese in the pan and let it melt and sizzle until golden and crispy.
  3. Crack the eggs directly over the feta and cook undisturbed until the whites are set.
  4. Season with black pepper and chili flakes. Cover briefly if firmer yolks are desired.
