A hearty and refreshing crispy chicken Caesar pasta salad combining crunchy golden chicken, tender pasta, crisp romaine, and creamy Caesar dressing for a satisfying meal.

Ingredients

  • 250g pasta (penne or fusilli)
  • 2 chicken breasts
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup Parmesan cheese, grated
  • 2 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water according to package instructions, then drain and let it cool.
  2. Season the chicken with salt and pepper, dip in beaten eggs, and coat with breadcrumbs.
  3. Heat olive oil in a pan and cook the chicken until golden and crispy on both sides, then slice into strips.
  4. In a large bowl, combine chopped romaine lettuce and cooled pasta.
  5. Add Caesar dressing and toss until well coated.
  6. Top with crispy chicken and sprinkle Parmesan cheese over the salad.
