Creamy white cheddar chicken pasta is a rich and comforting dish made with tender chicken, pasta, and a smooth, cheesy white cheddar sauce. It’s easy to make and perfect for a satisfying weeknight dinner.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 12 oz pasta (penne, shells, or rotini)
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 2 cups white cheddar cheese, shredded
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika or Italian seasoning (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Boil pasta in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil or butter over medium heat. Add chicken and season with salt, pepper, and paprika or Italian seasoning if using. Cook until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, add more butter if needed and sauté garlic until fragrant, about 30 seconds.
  4. Whisk in flour and cook for 1 minute to form a roux.
  5. Gradually whisk in milk and heavy cream. Cook, stirring frequently, until the sauce thickens, about 3–5 minutes.
  6. Stir in shredded white cheddar cheese until fully melted and smooth.
  7. Add cooked pasta and chicken back into the skillet. Toss to coat evenly with the sauce.
  8. Garnish with chopped parsley if desired and serve hot.

  • Add vegetables like broccoli, peas, or spinach for a nutritious twist.
  • Use rotisserie chicken to save time.
  • Substitute cream with half-and-half or more milk for a lighter version.
