Ingredients

  • 2 medium cooked beets, peeled and cubed or sliced
  • 1 tbsp red wine vinegar or balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 1 tsp fresh thyme or dill (optional)
  • Salt and pepper to taste
  • Toppings:
  • 1/4 cup roasted pistachios, chopped

Instructions

  1. In a bowl, combine vinegar, olive oil, honey, herbs (if using), salt, and pepper. Add cooked beets and marinate for 15–30 minutes.
  2. In a food processor, blend feta, Greek yogurt, olive oil, lemon juice, and garlic (if using) until smooth and creamy. Taste and adjust seasoning.
  3. Spread whipped feta onto a serving plate or shallow bowl.
  4. Spoon marinated beets over the feta, letting some of the marinade drizzle over.
