A creamy and comforting spring vegetable risotto made with arborio rice, tender seasonal vegetables, and bright lemon flavors for a fresh yet satisfying dish.

Ingredients

  • 1 cup arborio rice
  • 2 tablespoons olive oil or butter
  • 1 small onion or shallot, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth, warmed
  • 1 cup asparagus, cut into pieces
  • 1/2 cup peas (fresh or frozen)
  • 1 cup zucchini, diced
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional:
  • 2 tablespoons fresh herbs (parsley or basil), chopped

Instructions

  1. Heat olive oil or butter in a large pan over medium heat.
  2. Add the chopped onion or shallot and sauté for 3–4 minutes until soft and translucent.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the arborio rice and toast for 1–2 minutes until slightly translucent around the edges.
  5. Begin adding warm vegetable broth one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  6. Continue this process for about 15 minutes, then stir in the asparagus, peas, and zucchini.
  7. Keep adding broth and stirring until the rice is creamy and tender, about 10–15 more minutes.
  8. Remove from heat and stir in parmesan cheese, lemon zest, and lemon juice.
  9. Season with salt and black pepper to taste.
  10. Garnish with fresh herbs if desired and serve immediately.
