These Creamy Seafood Lasagna Rolls are a rich, elegant twist on traditional lasagna—stuffed with shrimp, crab meat, and cheese, then smothered in Alfredo sauce and baked to perfection. With tender pasta, creamy filling, and bubbling cheese, this seafood pasta bake is perfect for a cozy dinner or special occasion.

Ingredients

  • 8 lasagna noodles
  • 1 tablespoon olive oil
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat, shredded
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups Alfredo sauce
  • ½ cup spinach, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles until al dente. Drain and lay flat to cool.
  2. In a large bowl, combine shrimp, crab, ricotta, ½ cup mozzarella, Parmesan, parsley, garlic powder, onion powder, salt, pepper, and spinach (if using).
  3. Spread a thin layer of Alfredo sauce in the bottom of a 9×13-inch baking dish.
  4. Spoon about ¼ cup of filling onto one end of each lasagna noodle, roll up, and place seam-side down in the dish.
  5. Pour remaining Alfredo sauce over the top and sprinkle with remaining mozzarella.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10–15 minutes until golden and bubbly.
  7. Let rest for 5 minutes before serving.

Notes

  • Swap in scallops, salmon, or other cooked seafood if preferred.
  • Add a squeeze of lemon juice or pinch of red pepper flakes for extra brightness.
  • Lighten up with low-fat cheese and light cream or Alfredo.
  • Can be made ahead and refrigerated or frozen before baking.
  • Serve with a green salad, garlic bread, or asparagus for a full meal.
