Ingredients

  • 1 lb ground or sliced Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed
  • 4 cups chicken broth
  • 9 oz cheese tortellini (refrigerated or frozen)
  • 3 cups fresh spinach
  • 3/4 cup heavy cream
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme or Italian seasoning
  • Crushed red pepper flakes (optional, to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned and fully cooked. Drain excess fat if needed.
  2. Add diced onion and sauté until translucent, about 3–4 minutes. Stir in minced garlic and cook for another minute.
  3. Add cubed sweet potatoes, salt, pepper, and dried thyme or Italian seasoning. Stir to combine.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10–12 minutes, or until sweet potatoes are fork-tender.
  5. Add tortellini and cook according to package instructions (about 5 minutes).
  6. Lower the heat and stir in heavy cream and fresh spinach. Cook until spinach is wilted and soup is heated through.
  7. Taste and adjust seasoning. Add crushed red pepper flakes if desired. Serve hot.

  • Substitute ground turkey sausage or chicken sausage for a lighter version.
  • Kale can be used instead of spinach for a heartier green.
