Creamy Roasted Tomato Pasta is a cozy, meatless dish featuring caramelized cherry tomatoes, garlic, and a velvety cream sauce tossed with pasta and topped with Parmesan and basil. It’s quick, flavorful, and full of Italian comfort.

Ingredients

  • 500g cherry or grape tomatoes
  • 3 tbsp olive oil
  • 4 garlic cloves, whole and peeled
  • Salt and black pepper, to taste
  • 1 tsp dried oregano or Italian seasoning
  • 350g pasta (penne, rigatoni, spaghetti, etc.)
  • 1/2 cup heavy cream or half-and-half
  • 1/3 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish
  • Optional: 1/2 tsp red pepper flakes

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Place cherry tomatoes and garlic on a baking tray. Drizzle with olive oil, season with salt, pepper, and oregano. Roast for 20–25 minutes until tomatoes are burst and caramelized.
  3. Meanwhile, cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  4. Transfer roasted tomatoes and garlic (with juices) to a skillet over medium heat. Gently mash them.
  5. Add cream and a splash of reserved pasta water, stirring to create a creamy sauce.
  6. Stir in Parmesan and let it melt into the sauce.
  7. Add cooked pasta and toss to coat evenly.
  8. Top with fresh basil, extra cheese, and red pepper flakes if using. Serve hot.

Notes

  • Blend the roasted mixture for a smoother sauce texture.
  • Add grilled chicken, shrimp, or sausage for protein.
  • Use plant-based cream and cheese for a vegan version.
  • Stir in spinach or arugula for extra greens.
  • Use chopped large tomatoes if cherry tomatoes aren’t available.
