Ingredients

  • Russet or Yukon Gold potatoes, peeled and diced
  • Onion, chopped
  • Garlic, minced
  • Butter
  • All-purpose flour
  • Chicken or vegetable broth
  • Milk or cream
  • Salt and pepper, to taste
  • Optional toppings: sour cream, shredded cheese, green onions

Instructions

  1. In a large pot, sauté chopped onions and garlic in butter over medium heat until softened.
  2. Stir in flour to make a roux and cook for 1–2 minutes, stirring constantly.
