Creamy Pepperoncini Chicken Skillet is a flavorful and comforting one-pan dinner made with tender chicken breasts, tangy pepperoncini peppers, and a rich, creamy sauce. This easy skillet meal is perfect for busy weeknights and is naturally gluten-free.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup sliced pepperoncini peppers
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper, then sear in the skillet for about 5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté onions and garlic for about 3 minutes until softened.
  4. Add pepperoncini peppers and cook for another 2 minutes.
  5. Pour in chicken broth, scraping up any browned bits to deglaze the skillet.
  6. Stir in heavy cream and bring to a simmer.
  7. Return the chicken to the skillet and simmer for about 10 minutes, or until fully cooked and sauce has thickened.
  8. Garnish with fresh parsley before serving.

Notes

  • Swap chicken breasts for boneless thighs for extra tenderness.
  • Use coconut milk instead of heavy cream for a dairy-free version.
  • Add spinach or cherry tomatoes for extra nutrition.
  • A sprinkle of Parmesan enhances the richness of the sauce.
  • Store leftovers in an airtight container for up to 3 days; reheat with a splash of broth if needed.
