Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil
  • 1 tbsp butter (optional)
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced (any variety)
  • 1/3 cup sun‑dried tomatoes, drained and chopped
  • 2 cups baby spinach
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream or half‑and‑half
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 cup grated Parmesan cheese (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil (and butter if using) in a large skillet over medium‑high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Transfer to a plate and set aside.
  3. In the same skillet, add a bit more oil if needed. Sauté garlic until fragrant (about 30 seconds).
  4. Add sliced mushrooms and cook until browned and softened, about 5 minutes.
  5. Stir in sun‑dried tomatoes and heat through.
  6. Pour in chicken broth, scraping up any browned bits. Then add cream and lemon juice.
  7. Let sauce simmer gently for 2–3 minutes until slightly thickened. Stir in spinach until wilted.
  8. Return the chicken to the skillet, spoon the sauce over the top, and heat through for another 2 minutes.
  9. Remove from heat and sprinkle with lemon zest and Parmesan (if using). Serve immediately.
