Creamy Mushroom Chicken Meatballs are tender, juicy chicken meatballs simmered in a rich and savory mushroom cream sauce. This comforting dish is easy enough for weeknights but elegant enough for guests, and it pairs beautifully with mashed potatoes, pasta, or crusty bread.

Ingredients

  • For the meatballs:
  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 small onion, finely grated or minced
  • 2 tablespoons Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped parsley
  • For the creamy mushroom sauce:
  • 1 tablespoon olive oil or butter
  • 8 oz mushrooms (button or cremini), sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream or half-and-half
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper, to taste
  • Fresh thyme or chopped parsley, for garnish

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, egg, garlic, onion, Parmesan (if using), salt, pepper, and parsley until just combined.
  2. Shape into 1½-inch meatballs.
  3. Heat olive oil in a large skillet over medium heat. Cook meatballs until browned and cooked through, about 8–10 minutes. Remove from skillet and set aside.
  4. In the same skillet, add more oil if needed and sauté mushrooms until browned and tender, about 5–6 minutes.
  5. Add garlic and cook for 1 minute. Stir in chicken broth and bring to a simmer.
  6. Add cream and Dijon mustard (if using), and simmer until slightly thickened, about 3–4 minutes.
  7. Return meatballs to skillet and spoon sauce over them. Simmer for 5 minutes to blend flavors.
  8. Garnish with parsley or thyme and serve hot.

Notes

  • Add spinach or kale to the sauce for more greens.
  • Use coconut milk for a dairy-free version.
  • Stir in a splash of white wine or lemon juice for extra depth.
  • Serve with mashed potatoes, pasta, rice, or bread.
  • Store leftovers in the fridge for up to 3 days and reheat gently on the stovetop or in the microwave.
