Creamy Chicken & Mushroom Pasta is a rich and comforting recipe made with tender chicken, earthy mushrooms, and a velvety Parmesan cream sauce. This easy pasta dish comes together in just 30 minutes, making it perfect for weeknight dinners or a cozy date-night meal.

Ingredients

  • 2 chicken breasts, cubed
  • 1 cup sliced mushrooms
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 8 oz pasta (spaghetti or linguine)
  • Salt and pepper, to taste
  • Fresh thyme, for seasoning

Instructions

  1. Season cubed chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook chicken 7–8 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic and mushrooms for 4–5 minutes until softened and golden.
  4. Add chicken broth and simmer 2 minutes, scraping up browned bits.
  5. Pour in heavy cream and bring to a gentle boil. Reduce heat and stir in Parmesan until sauce thickens.
  6. Meanwhile, cook pasta according to package directions. Drain.
  7. Add pasta and chicken to the skillet. Toss until coated in sauce.
  8. Season with fresh thyme, salt, and black pepper. Serve hot.

  • Swap chicken for shrimp or sausage for variety.
  • Use half-and-half or evaporated milk for a lighter version.
  • Add spinach, peas, or mushrooms with white wine for extra flavor.
