Creamy Cajun Sausage Pasta is a bold and comforting one-pan dish made with smoky sausage, tender pasta, and a rich, spicy cream sauce. Ready in under 30 minutes, this easy dinner is full of Cajun flavor and perfect for busy weeknights when you want something hearty and satisfying.

Ingredients

  • 12 oz smoked sausage (andouille or kielbasa), sliced
  • 12 oz pasta (penne, rigatoni, or fusilli)
  • 1 tbsp olive oil or butter
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream or half-and-half
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Optional: 1/2 cup diced tomatoes
  • Optional: 1 cup baby spinach
  • Optional: red pepper flakes or chopped parsley for garnish

Instructions

  1. Cook pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté sliced sausage until browned, then remove and set aside.
  3. In the same skillet, add onion and garlic. Cook until softened and fragrant, about 2–3 minutes.
  4. Sprinkle in Cajun seasoning, then stir in chicken broth and cream. Bring to a gentle simmer and cook for 3–4 minutes to slightly thicken.
  5. Return sausage to the skillet, followed by the drained pasta. Toss everything to coat in the sauce.
  6. Stir in Parmesan cheese. Season with salt, pepper, and red pepper flakes if using.
  7. Garnish with chopped parsley and serve hot.
