Crazy Good Egg Tacos are a deliciously easy, flavor-packed breakfast (or anytime) meal made with fluffy scrambled eggs, your favorite toppings, and warm tortillas. Perfect for mornings when you want something hearty but fast.

Ingredients

  • 4 large eggs
  • 2 tbsp milk or cream (optional)
  • Salt and pepper, to taste
  • 1 tbsp butter or oil
  • 4 corn or flour tortillas
  • 1/2 cup shredded cheese (cheddar, cotija, or Monterey Jack)
  • 1 avocado or 1/2 cup guacamole
  • 1/4 cup salsa or hot sauce
  • Fresh cilantro, chopped
  • Optional toppings: sautéed onions, black beans, jalapeños, pickled onions, lime wedges

Instructions

  1. In a bowl, whisk the eggs with milk (if using), salt, and pepper until fully combined.
  2. Heat a nonstick skillet over medium heat and melt butter or oil.
  3. Pour in the eggs and cook slowly, stirring gently to form soft curds. Remove from heat when just set.
  4. Warm the tortillas on a dry skillet or directly over a burner until soft and pliable.
  5. Spoon the scrambled eggs into the warm tortillas.
  6. Top with cheese, avocado or guacamole, salsa, cilantro, and any desired extras.
  7. Serve immediately with lime wedges and extra hot sauce if desired.

Notes

 

  • Mix black beans, corn, and shredded cheese into the eggs for a Tex-Mex spin.
  • Add smoked paprika or cumin to the eggs for extra depth.
  • Sauté peppers, onions, or spinach before adding eggs for a veggie-forward option.
  • Scrambled eggs can be made ahead and reheated for fast taco assembly.
