Ingredients

  • ½ cup unsalted butter
  • 3 garlic cloves, minced or grated
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon red pepper flakes (or more to taste)
  • ¼ teaspoon paprika
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt and black pepper, to taste
  • Optional: ½ teaspoon thyme, tarragon, or rosemary, finely chopped

Instructions

  1. Melt butter in a small saucepan over medium heat.
  2. Add garlic and cook for 1 minute, just until fragrant (do not brown).
  3. Remove from heat and whisk in Dijon mustard, lemon juice, zest, red pepper flakes, and paprika.
  4. Stir in parsley and chives. Season with salt and pepper to taste.
  5. Pour into a small bowl and serve warm as a dip or drizzle.

Notes

  • For a spicier version, increase red pepper flakes or add a pinch of cayenne.
  • Swap lemon for lime for a zesty twist.
  • Add Parmesan or horseradish for deeper flavor.
  • Use ghee or plant-based butter if preferred.
  • Reheat gently and stir before serving if made ahead.
