Ingredients

  • 1 can or 12 oz corned beef (halal-certified if needed)
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 1 bell pepper, chopped
  • 2 potatoes, diced
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • ½ tsp ground cumin
  • ¼ tsp turmeric (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup beef broth (halal-certified if applicable)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–4 minutes until translucent.
  2. Add chopped carrots, bell pepper, and potatoes. Cook for 5–7 minutes, stirring occasionally.
  3. Stir in minced garlic, paprika, cumin, and optional turmeric. Cook for 1–2 minutes until fragrant.
  4. Add chopped corned beef and stir to combine.
  5. Pour in beef broth. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, or until vegetables are tender and broth is slightly reduced.
  6. Garnish with fresh parsley and serve warm with rice, bread, or a side salad.
