Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp fresh ginger, sliced or minced
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth or stock
  • 12 tbsp soy sauce or fish sauce (optional)
  • Salt and black pepper, to taste
  • 46 oz egg noodles, rice noodles, or any noodles of choice
  • 1 tbsp olive oil or sesame oil
  • Chopped green onions and fresh herbs (cilantro or parsley), for garnish
  • 1 tbsp lemon or lime juice (optional, for brightness)

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onion, garlic, and ginger for 2–3 minutes until fragrant.
  2. Add carrots and celery; cook for another 3–4 minutes until slightly softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add chicken and simmer gently for 15–20 minutes until fully cooked.
  5. Remove chicken, shred with forks, and return to the pot.
  6. Stir in noodles and cook according to package directions until tender.
  7. Season with salt, pepper, and soy or fish sauce if using.
  8. Finish with lemon or lime juice. Garnish with green onions and herbs before serving.
