A soft and moist cinnamon roll-inspired poke cake soaked with buttery cinnamon filling and topped with a rich cream cheese glaze for the ultimate cozy dessert.

Ingredients

  • 1 box yellow or white cake mix
  • 3 large eggs
  • 0.5 cup vegetable oil
  • 1 cup milk or water
  • 0.5 cup unsalted butter
  • 1 cup brown sugar
  • 1.5 tsp ground cinnamon
  • 1 (14 oz) can sweetened condensed milk
  • 8 oz cream cheese, softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare cake batter according to package directions using eggs, oil, and milk or water.
  3. Pour batter into prepared pan and bake for about 30 minutes, until a toothpick inserted in the center comes out clean.
  4. While the cake is still warm, use the handle of a wooden spoon to poke holes evenly across the surface.
  5. In a saucepan, melt butter and stir in brown sugar and cinnamon until smooth.
  6. Pour sweetened condensed milk evenly over the cake, allowing it to soak into the holes.
  7. Drizzle the cinnamon-butter mixture over the top.
  8. Allow the cake to cool completely.
  9. Beat cream cheese, powdered sugar, and vanilla until smooth, adding milk as needed to reach spreadable consistency.
  10. Spread glaze evenly over cooled cake before serving.
