Naturally sweet, no-bake truffles made with dates, almonds, and almond butter, coated in rich dark chocolate for a simple yet indulgent treat.

Ingredients

  • 1 cup pitted dates, packed
  • 3/4 cup raw or roasted almonds
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 oz dark chocolate, chopped
  • 1 teaspoon coconut oil

Instructions

  1. Add dates and almonds to a food processor and blend until finely chopped and sticky.
  2. Add almond butter, vanilla extract, and salt. Process again until the mixture holds together.
  3. Scoop small portions and roll into bite-sized balls.
  4. Place the balls on a parchment-lined tray and refrigerate while preparing the chocolate.
  5. Melt dark chocolate with coconut oil until smooth.
  6. Dip each truffle into the melted chocolate, letting excess drip off.
  7. Return truffles to the tray and refrigerate until the chocolate is fully set.
  8. Serve chilled or at room temperature.

Notes

  • Use dairy-free dark chocolate to keep the recipe vegan.
  • Truffles can be rolled in cocoa powder or chopped nuts instead of chocolate.
  • Add cinnamon or espresso powder for extra flavor.
