This Chicken with Peaches is a flavorful one-pan dinner that pairs juicy chicken thighs with sweet caramelized peaches and a glossy honey-lemon glaze. Fresh herbs like thyme or basil elevate this 30-minute meal, making it a perfect balance of fresh, summery flavors and comforting richness.

Ingredients

  • 4 skinless, boneless chicken thighs (or chicken tenders)
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 fresh firm yellow peaches, unpeeled and sliced
  • 2 tbsp honey
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp butter
  • Fresh thyme or fresh basil, for garnish

Instructions

  1. Season chicken with chili powder, Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for several minutes on each side until fully cooked; remove and set aside.
  4. Add peaches to the skillet; cook for 5 minutes until slightly softened.
  5. Stir in honey, lemon juice, and butter; cook until a glossy glaze forms.
  6. Return chicken to the skillet, nestle among peaches, and sprinkle with fresh thyme or basil.
  7. Warm through for 1–2 minutes and serve immediately.
