Ingredients

  • 2 cups cooked shredded chicken
  • 4 bolillo rolls or sandwich rolls
  • 1 ripe avocado, sliced
  • 1/2 cup refried beans
  • 1/2 cup shredded lettuce
  • 1 medium tomato, sliced
  • 1/4 cup mayonnaise
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (optional)
  • 1 tbsp vegetable oil or butter
  • Pickled jalapeños (optional)
  • Sliced onions (optional)
  • Hot sauce (optional)

Instructions

  1. If the chicken is not already prepared, cook and shred it into bite-sized pieces. Season lightly with salt, pepper, and garlic powder if desired.
  2. Slice the bolillo rolls in half. Lightly toast them in a skillet with vegetable oil or butter until the inside becomes slightly crispy.
  3. Spread refried beans evenly on the bottom half of each roll.
  4. On the top half of each roll, spread mayonnaise and drizzle with lime juice.
  5. Layer the shredded chicken over the beans.
  6. Add avocado slices, tomato slices, shredded lettuce, and shredded cheese if using.
  7. Add optional toppings such as pickled jalapeños, sliced onions, or hot sauce.
  8. Place the top half of the roll over the fillings and gently press the sandwich together before serving.
