Ingredients

  • Spaghetti (or other long pasta)
  • Cherry or grape tomatoes, halved
  • Olive oil
  • Garlic, minced
  • Salt and black pepper
  • Chicken breasts
  • Smoked paprika
  • Italian seasoning
  • Butter
  • Meyer lemon (or regular lemon), sliced
  • Fresh basil, chopped
  • Burrata cheese, torn
  • Pine nuts, toasted

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, garlic, salt, and pepper. Roast for 15–20 minutes until soft and slightly caramelized.
  3. Season chicken with smoked paprika, Italian seasoning, salt, and pepper. Cook in a skillet over medium heat until golden and fully cooked; slice into strips.
  4. In the same skillet, melt butter and sauté garlic with lemon slices until fragrant, allowing lemon to infuse the sauce.
  5. Cook spaghetti according to package directions. Toss in lemon butter garlic sauce, removing lemon slices before serving.
  6. Plate spaghetti and top with roasted tomatoes, sliced chicken, fresh basil, and torn burrata.
  7. Sprinkle toasted pine nuts over the top before serving.

  • Use fettuccine, bucatini, or linguine instead of spaghetti.
