Ingredients

  • 4 boneless, skinless chicken breasts (pounded thin)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Vegetable or canola oil (for frying)
  • 2 tbsp butter
  • 8 oz fresh mushrooms (cremini or white button), sliced
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour (for gravy)
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream or milk
  • Salt and black pepper to taste
  • Fresh thyme or parsley (optional, for garnish)

Instructions

  1. Slice each chicken breast in half horizontally and pound thin. Season both sides with salt, pepper, garlic powder, and paprika.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Dredge each chicken piece in flour, dip in egg, then coat with panko, pressing gently to adhere.
  4. Heat oil in a large skillet over medium heat. Fry schnitzels 3–4 minutes per side until golden brown and crispy. Drain on paper towels.
  5. For the gravy, melt butter in a pan over medium heat. Sauté mushrooms until browned, about 5–7 minutes.
  6. Add garlic and cook for 1 minute. Stir in flour and cook for 1–2 minutes to eliminate raw flour taste.
  7. Slowly whisk in chicken broth. Simmer until thickened, then stir in cream or milk. Season with salt and pepper.
  8. Spoon mushroom gravy over schnitzels just before serving. Garnish with fresh herbs if desired.
