Chicken Diablo is a spicy, creamy chicken dish made with Dijon mustard, hot sauce, and garlic in a rich, flavorful sauce. It’s bold, comforting, and perfect for weeknights or impressing guests.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 3 garlic cloves, minced
  • 2 tbsp Dijon mustard
  • 12 tbsp hot sauce (like Tabasco or preferred brand)
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup chicken broth
  • 1 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Season chicken with salt, pepper, and smoked paprika.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear chicken on both sides until golden brown and cooked through, about 6–7 minutes per side. Remove and set aside.
  4. In the same skillet, sauté minced garlic until fragrant.
  5. Stir in Dijon mustard, hot sauce, and chicken broth, scraping up any browned bits.
  6. Add cream and simmer until slightly thickened, about 3–5 minutes.
  7. Return chicken to the skillet and spoon sauce over it. Simmer for another 2–3 minutes.
  8. Garnish with fresh herbs if desired and serve hot.

Notes

  • Adjust spice level by changing the amount of hot sauce or adding red pepper flakes.
  • Substitute coconut cream for a dairy-free version.
  • Chipotle hot sauce and a pinch of cumin add smoky depth.
  • Sautéed mushrooms or spinach make great additions to the sauce.
