The Chicken Avocado Melt Sandwich is a warm, satisfying sandwich layered with juicy chicken, creamy avocado, melty cheese, and toasted bread. Perfect for lunch, dinner, or a quick weekend bite, it’s easy to make and packed with flavor.

Ingredients

  • 1 cup cooked chicken breast or rotisserie chicken, sliced or shredded
  • 1 ripe avocado
  • 1 tsp lemon or lime juice
  • Salt and black pepper, to taste
  • 4 slices of bread (sourdough, ciabatta, or sandwich bread)
  • 4 slices of cheese (mozzarella, Swiss, cheddar, or provolone)
  • 4 slices tomato (optional)
  • 4 slices red onion (optional)
  • 2 tbsp butter or olive oil (for grilling)

Instructions

  1. Mash avocado in a bowl with lemon or lime juice, salt, and pepper.
  2. Spread mashed avocado on one side of each bread slice.
  3. Top two slices with chicken, cheese, and optional tomato and onion.
  4. Place remaining bread slices on top to form sandwiches.
  5. Heat butter or oil in a skillet over medium heat.
  6. Grill sandwiches for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
  7. Alternatively, use a panini press or bake at 375°F for 10 minutes, flipping halfway.
  8. Let rest 1 minute, slice in half, and serve warm.

Notes

  • Add bacon or chipotle mayo for extra flavor.
  • Use pepper jack for a spicy twist.
  • Try open-faced on sweet potato rounds for a low-carb version.
  • Dairy-free cheese or no cheese also works—avocado adds creaminess.
