Cherry pie bars combine a buttery soft crust, sweet-tart cherry filling, and a golden crumble topping in an easy slice-and-serve dessert. They deliver all the flavor of classic cherry pie without the extra work of rolling out dough.

Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 can (21 ounces) cherry pie filling or 2 1/2 cups homemade cherry filling

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually mix in the flour and salt until a soft dough forms.
  5. Press two-thirds of the dough evenly into the prepared pan to form the base.
  6. Spoon the cherry pie filling evenly over the crust.
  7. Drop small spoonfuls of the remaining dough over the filling to create a crumble topping.
  8. Bake for 35–40 minutes, until lightly golden and set.
  9. Cool completely before slicing into bars.

Notes

  • Drizzle with a powdered sugar glaze after cooling for extra sweetness.
  • Add sliced almonds to the topping for added texture.
  • Stir lemon zest into the dough for a brighter flavor.
  • Store at room temperature for up to 2 days or refrigerate for up to 5 days.
