Cherry Cheesecake Bars combine a buttery graham cracker crust, creamy cheesecake filling, and sweet cherry topping into easy-to-serve squares. All the flavor of cheesecake with none of the fuss.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar (for filling)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream or plain yogurt (optional)
  • 1 can (21 oz) cherry pie filling or homemade cherry compote

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8 or 9×9-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture firmly into the bottom of the pan.
  3. Bake crust for 8–10 minutes, then let cool slightly.
  4. In a large bowl, beat cream cheese until smooth. Add 2/3 cup sugar, eggs, vanilla, and sour cream if using. Mix until smooth and combined.
  5. Pour cheesecake filling over the crust and smooth the top.
  6. Bake for 30–35 minutes, or until center is set but slightly jiggly.
  7. Cool completely, then chill in the fridge for at least 2 hours.
  8. Spread cherry pie filling on top, then slice into bars and serve chilled or at room temperature.

Notes

  • Use chocolate cookie crumbs instead of graham crackers for a twist.
  • Add lemon or orange zest to filling for a citrus kick.
  • Try different toppings like blueberry or strawberry pie filling.
  • Make mini versions in a muffin tin for individual servings.
