A quick and comforting one-pan meal featuring seasoned ground beef, tender rice, and melted cheese, packed with bold taco flavors and perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp taco seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • Optional: sour cream
  • Optional: chopped cilantro
  • Optional: sliced jalapeños
  • Optional: green onions

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
  2. Stir in minced garlic and cook briefly until fragrant.
  3. Add ground beef and cook, breaking it apart, until browned.
  4. Mix in taco seasoning, salt, and black pepper until beef is well coated.
  5. Stir in uncooked rice, diced tomatoes, and beef broth, mixing everything together.
  6. Bring to a simmer, then cover and cook for 15–18 minutes until rice is tender and liquid is absorbed.
  7. Sprinkle shredded cheddar cheese over the top and allow it to melt.
  8. Remove from heat and serve warm with optional toppings.
