Cheesy Taco Potatoes combine baked russet potatoes with savory taco-seasoned ground beef, melty cheddar cheese, and classic toppings like salsa and sour cream. Ingredients

  • 4 large russet potatoes (about 1 kg)
  • 1 lb (450 g) ground beef
  • 1 packet taco seasoning (30 g)
  • 1 cup (240 ml) shredded cheddar cheese
  • 1 cup (240 ml) salsa
  • ½ cup (120 ml) sour cream
  • ¼ cup (15 g) chopped fresh cilantro
  • Optional Substitutions:
  • 1 can (400 g) black beans or 1 cup (240 g) cooked lentils for vegetarian version
  • Greek yogurt instead of sour cream

Instructions

  1. Bake the Potatoes: Preheat oven to 400°F (200°C). Scrub and prick potatoes with a fork. Bake for 45–60 minutes until fork-tender. Let cool slightly.
  2. Cook the Beef: Heat oil in a skillet over medium-high. Add ground beef and cook until browned, about 8–10 minutes. Stir in taco seasoning and cook 2–3 more minutes.
  3. Assemble the Potatoes: Slice each potato lengthwise and fluff the inside with a fork. Spoon in the seasoned beef.
  4. Add the Cheese: Top with shredded cheese. Return to the oven for 10–15 minutes, until cheese is melted and bubbly.
  5. Finish and Garnish: Remove from oven and top each with salsa, sour cream, and chopped cilantro. Serve hot.
