Cheesy Stuffed Meatloaf Bites are the ultimate bite-sized comfort food! Made with seasoned ground beef and stuffed with gooey cheddar or mozzarella, these mini meatloaf bites are perfect for appetizers, parties, or a fun family dinner. Quick to prep and always a crowd-pleaser!

Ingredients

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tsp mustard
  • 4 oz cubed cheese (cheddar, mozzarella, or preferred melting cheese)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or baking sheet.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, ketchup, and mustard. Mix until fully combined.
  3. Scoop about 1 tablespoon of the meat mixture, flatten slightly, and place a cube of cheese in the center. Wrap the meat around the cheese and form into a sealed ball.
  4. Place the stuffed bites into the prepared baking dish, seam-side down.
  5. Bake for 18–22 minutes, or until meat is fully cooked and cheese is melted.
  6. Let rest for 2–3 minutes before serving to avoid burning your mouth with hot cheese.

  • Cheese Options: Cheddar and mozzarella are great, but try pepper jack or Swiss for variety.
  • Veggie Boost: Add finely shredded zucchini or carrot to the meat mixture.
