Ingredients

  • 2 lbs baby potatoes or russet potatoes (chopped)
  • 3 tbsp olive oil
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1 lb smoked sausage (sliced)
  •  cups shredded cheddar cheese
  • 1 packet ranch seasoning mix (store‑bought or homemade)
  • Chopped green onions or parsley (optional garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Grease a large baking dish or sheet pan.
  2. Toss chopped potatoes with olive oil, salt, pepper, and garlic powder. Spread in an even layer.
  3. Roast potatoes for 25 minutes, flipping halfway through for even browning.
  4. Add sliced smoked sausage to the pan and mix with potatoes. Roast for another 15 minutes.
  5. Sprinkle ranch seasoning and shredded cheese over the top. Return to oven for 5–7 minutes until cheese is melted and bubbly.
