These cheesy potato burritos are a crave-worthy comfort food packed with crispy tater tots, savory seasoned beef, melted cheese, and creamy chipotle sauce—all wrapped in a warm tortilla. Perfect for quick dinners or freezer-friendly meal prep.

Ingredients

  • 1 pound ground beef (or ground turkey/plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce (adjust to taste)
  • 6 large flour tortillas
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, chopped green onions, fresh cilantro

Instructions

  1. Preheat oven and bake tater tots according to package directions until golden and crispy.
  2. In a skillet over medium heat, cook ground beef with salt and pepper until browned. Drain excess fat.
  3. Mix sour cream and chipotle sauce in a small bowl to create a creamy spread.
  4. To assemble burritos, spread chipotle cream down the center of each tortilla.
  5. Add ground beef, crispy tater tots, cheddar cheese, and Monterey Jack cheese.
  6. Fold in the sides and roll tightly into a burrito.
  7. Optional: Toast burritos seam-side down in a skillet for 2–3 minutes for added crispness.
  8. Garnish with toppings and serve.

Notes

  • Swap ground beef for plant-based protein or black beans for a vegetarian option.
  • Use only one cheese if preferred, or try pepper jack for a spicier twist.
  • Add jalapeños or hot sauce inside for more heat.
  • Use sweet potato tots for a fun variation.
  • Freezer-friendly: wrap burritos individually and freeze for up to 2 months.
