Ingredients

  • Ground beef
  • Russet or Yukon Gold potatoes (thinly sliced)
  • Onion (chopped)
  • Garlic (minced)
  • Shredded cheddar cheese
  • Beef broth or water
  • Paprika
  • Salt and pepper
  • Olive oil or butter
  • Optional toppings: green onions, parsley, sour cream

Instructions

  1. Heat oil in a large skillet over medium heat. Add ground beef, paprika, salt, and pepper. Cook until browned. Remove and set aside.
  2. In the same skillet, sauté onion and garlic until fragrant.
  3. Add sliced potatoes and stir to coat in oil and seasonings.
  4. Pour in beef broth and cover. Simmer for 10–15 minutes, or until potatoes are tender.
  5. Return cooked beef to the skillet and stir to combine.
  6. Sprinkle shredded cheese over the top. Cover and let melt on low heat.
  7. Garnish with green onions or parsley. Serve hot.

Notes

  • Use any cheese you love—mozzarella, pepper jack, Colby Jack, or a blend.
  • Add frozen peas, corn, or bell peppers for extra veggies.
  • For creamier results, stir in sour cream or cream cheese before adding the cheese topping.
  • Make it spicy with red pepper flakes or a splash of hot sauce.
  • To bake instead: Layer ingredients in a casserole dish and bake at 375°F (190°C) for 40–45 minutes, then broil to brown the cheese.
