Ingredients

  • 3 cups cooked white rice (long grain or jasmine)
  • 3 cups chopped broccoli florets (fresh or thawed from frozen)
  • 2 cups shredded cheddar cheese (divided)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1/2 cup sour cream or mayonnaise
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 cup crushed crackers or breadcrumbs for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a casserole dish.
  2. In a skillet, melt butter over medium heat. Sauté onion and garlic until softened.
  3. Stir in the cream soup and sour cream. Add the cooked rice and broccoli, stirring to combine.
  4. Mix in 1 ½ cups of shredded cheddar. Season with salt and pepper to taste.
  5. Transfer the mixture to the casserole dish. Top with remaining cheddar.
  6. If using, sprinkle crushed crackers or breadcrumbs over the top.
  7. Bake uncovered for 25–30 minutes, until bubbly and golden.

Notes

  • Use brown rice or quinoa for a healthier variation.
  • Add cooked chicken or turkey for a complete main dish.
  • Swap cheddar with Monterey Jack or Gruyère for different flavors.
  • For a vegetarian version, use cream of mushroom soup.
