Cheesy Broccoli Fritters are crispy, savory snacks made with broccoli, cheese, and simple seasonings. Quick to prepare and packed with veggies, they’re perfect for snacks, lunches, or light dinners.

Ingredients

  • 2 cups chopped, steamed broccoli (fresh or frozen, drained)
  • 2 large eggs
  • 1/2 cup all-purpose flour or breadcrumbs
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Olive oil or neutral oil, for frying

Instructions

  1. Steam broccoli until tender, then finely chop. If using frozen broccoli, thaw and squeeze out excess moisture first.
  2. In a large bowl, combine chopped broccoli, eggs, cheese, flour or breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix until the mixture holds together. Add more flour if too wet.
  3. Heat oil in a nonstick skillet over medium heat.
  4. Scoop about 2 tablespoons of the mixture and form into small patties. Place them in the pan without overcrowding.
  5. Fry fritters for 3–4 minutes per side, or until golden brown and crispy.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm with your favorite dip.

  • Try mozzarella or feta cheese for different flavors.
  • Use almond flour or gluten-free breadcrumbs to make them gluten-free.
  • Bake instead of fry for a lighter option—400°F for 20–25 minutes, flipping halfway.
