3 cups (300 g) broccoli florets
1 cup (100 g) shredded cheddar cheese
1/2 cup (50 g) grated parmesan cheese
1 cup (100 g) breadcrumbs
2 large eggs
2 cloves garlic, minced
1/4 cup (40 g) finely chopped onion
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil or cooking spray
Instructions
Preheat the oven to 180°C (350°F) if baking.
Steam or boil the broccoli until tender, then drain well, chop finely, and let cool.
In a large bowl, combine chopped broccoli, cheddar cheese, parmesan cheese, breadcrumbs, eggs, garlic, and onion.
Season with salt and black pepper, then mix until well combined.
Form the mixture into small balls (about 1–1.5 inches) and place on a lined baking sheet.
Lightly brush or spray the balls with olive oil.
Bake for 20–25 minutes, turning halfway through, until golden and crispy.
Alternatively, heat oil in a pan and fry the balls until evenly golden on all sides.
Remove and let cool slightly before serving.
