Chai Spice Cookies are soft, chewy treats infused with the warm, comforting spices found in a cup of chai—like cinnamon, cardamom, ginger, and cloves. They’re perfect for cozy fall or winter baking and pair wonderfully with tea or coffee.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional: extra sugar-spice mix for rolling (2 tbsp sugar + 1/4 tsp each chai spice)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.
  3. In another large bowl, cream the butter with the brown and granulated sugars until light and fluffy.
  4. Add egg and vanilla extract; beat until smooth.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Roll dough into 1-inch balls. Optional: roll each ball in sugar-spice mix for added flavor and sparkle.
  7. Place dough balls 2 inches apart on prepared baking sheet.
  8. Bake for 9–11 minutes, until edges are set and centers are still soft.
  9. Let cool on the baking sheet for 3 minutes, then transfer to wire rack to cool completely.

Notes

  • Add 1 tbsp molasses for extra chew and richness.
  • White chocolate chips or chopped nuts add texture.
  • For a vegan version, use plant-based butter and a flax egg.
  • A pinch of black pepper enhances the chai flavor with subtle heat.
  • Dough can be frozen; bake straight from freezer with an extra minute or two.
