A fresh, vibrant carrot beet juice that’s naturally sweet, earthy, and energizing, made with simple ingredients for a nourishing homemade drink.

Ingredients

  • 4 medium carrots, peeled and chopped
  • 2 medium beets, peeled and chopped
  • 1 teaspoon fresh ginger, grated (optional)
  • 12 tablespoons fresh lemon juice (optional)
  • 1 cup water (for blending)

Instructions

  1. Wash and peel the carrots and beets, then cut them into small chunks.
  2. If using a juicer, juice the carrots, beets, and ginger according to the manufacturer’s instructions.
  3. If using a blender, add the chopped carrots, beets, ginger, and water. Blend until completely smooth.
  4. Strain the blended mixture through a fine mesh sieve or cheesecloth to separate the juice from the pulp.
  5. Stir in fresh lemon juice if desired.
  6. Pour into glasses and serve immediately.

Notes

  • Shake or stir before drinking, as natural separation may occur.
  • Add apple or orange for extra sweetness if desired.
  • The leftover pulp can be reused in soups or baking.
