Caramelized Onion and Gruyere Dip is a rich, creamy, and savory appetizer packed with sweet, slow-cooked onions and nutty Gruyere cheese. Baked until bubbly and golden, it’s perfect for sharing at parties or cozy nights in.

Ingredients

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 2 cloves garlic, minced
  • 1 cup Gruyere cheese, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • Optional: 1/4 cup shredded Parmesan cheese
  • For serving: toasted baguette slices, crackers, or fresh vegetables

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat butter and olive oil over medium-low heat. Add sliced onions and cook, stirring often, for 30–40 minutes until deep golden and caramelized.
  3. Add garlic and thyme in the last few minutes of cooking. Season with salt and pepper.
  4. In a mixing bowl, combine cream cheese, sour cream, and mayonnaise until smooth.
  5. Stir in shredded Gruyere, caramelized onions, and Parmesan if using. Mix until well combined.
  6. Transfer the mixture to a greased baking dish and bake for 20–25 minutes until hot and bubbly.
  7. Let cool slightly before serving. Garnish with extra herbs if desired.

Notes

  • Add a splash of white wine or balsamic vinegar to the onions while caramelizing for added depth.
  • Substitute Greek yogurt for sour cream for a lighter dip.
  • Top with breadcrumbs before baking for a crispy finish.
  • Use Swiss or Fontina in place of Gruyere for different flavor variations.
  • Store leftovers in the fridge for up to 3 days and reheat before serving.
