Caramel Apple Cheesecake Bars are a cozy fall dessert layered with buttery graham cracker crust, creamy cheesecake, spiced apples, and rich caramel drizzle. These bars are easier than pie, perfect for potlucks, make-ahead friendly, and guaranteed to impress.

Ingredients

  • For the crust:
  • Graham cracker crumbs
  • Unsalted butter, melted
  • For the cheesecake layer:
  • Cream cheese, softened
  • Granulated sugar
  • Eggs
  • Vanilla extract
  • For the apple layer:
  • Apples, peeled and chopped
  • Ground cinnamon
  • Brown sugar
  • All-purpose flour
  • Topping:
  • Caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. Combine graham cracker crumbs and melted butter. Press into the bottom of the pan to form an even crust.
  3. In a bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs and vanilla, mixing until fully incorporated.
  4. Pour cheesecake mixture over the crust and smooth the top.
  5. In another bowl, toss chopped apples with cinnamon, brown sugar, and flour. Evenly layer them over the cheesecake filling.
  6. Bake for 45–50 minutes, until the center is just set and edges are slightly golden.
  7. Cool completely, then refrigerate for at least 2 hours (or overnight).
  8. Before serving, drizzle with caramel sauce and slice into bars.

Notes

  • Use tart apples like Granny Smith for the best contrast of flavors.
  • Swap apples for pears or use a mix of both.
  • Add chopped pecans or streusel topping before baking for extra crunch.
  • A dash of nutmeg or cardamom enhances the fall spice profile.
  • Bars slice more cleanly when well chilled.
