This Caprese Chicken Gnocchi Skillet is a one-pan meal that combines juicy chicken, crispy pan-fried gnocchi, sweet cherry tomatoes, melty mozzarella, and fresh basil—bringing the flavors of a classic Caprese salad to a comforting, easy dinner. Ready in under 30 minutes, it’s perfect for busy weeknights and packed with flavor.

Ingredients

  • 1 lb gnocchi (shelf-stable or refrigerated)
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 23 tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup fresh mozzarella balls (or 1 cup shredded mozzarella)
  • 1/2 cup fresh basil leaves
  • Salt and black pepper, to taste
  • Balsamic glaze, for drizzling (optional)
  • Red pepper flakes, for heat (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper. Add to the skillet and cook until golden brown and cooked through. Remove and set aside.
  3. Add remaining olive oil to the skillet. Add gnocchi and cook until golden and crispy, about 5–7 minutes.
  4. Stir in minced garlic and sauté for 30 seconds until fragrant.
  5. Return chicken to the skillet along with cherry tomatoes. Cook for 2–3 minutes until tomatoes are slightly softened.
  6. Remove from heat and stir in mozzarella and fresh basil.
  7. Drizzle with balsamic glaze and sprinkle with red pepper flakes, if using. Serve warm.
