Burrata Bruschetta is a quick and elegant appetizer combining crisp toasted baguette slices, creamy burrata cheese, and a vibrant tomato-basil topping, all finished with a drizzle of balsamic glaze. Ready in under 20 minutes, this Italian-inspired dish is perfect for summer gatherings, dinner parties, or a light lunch.

Ingredients

  • 1 large baguette, sliced into ½-inch pieces
  • 2 tablespoons olive oil
  • 2 ripe tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 8 ounces burrata cheese
  • Salt and pepper, to taste
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  2. Bake for 5–7 minutes until golden and crisp at the edges.
  3. In a bowl, toss diced tomatoes with chopped basil; season with salt and pepper.
  4. Let baguette slices cool slightly. Top each with a generous spoonful of burrata and the tomato-basil mixture.
  5. Drizzle with balsamic glaze just before serving.

Notes

  • Use heirloom tomatoes for more color and sweetness.
  • Add fresh mint or oregano for a flavor twist.
  • Substitute burrata with fresh mozzarella or ricotta if needed.
  • For roasted tomato bruschetta, roast tomatoes before topping the bread.
  • Best enjoyed fresh—store bread, tomato mixture, and burrata separately if prepping ahead.
