Ingredients

  • 1 ball fresh burrata cheese
  • 1 cup cherry tomatoes or chopped vine tomatoes
  • 1/4 cup fresh basil leaves, torn or sliced
  • 1 tablespoon olive oil, plus more for drizzling
  • 12 garlic cloves, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 baguette or rustic bread, sliced
  • Optional: balsamic glaze or reduction, for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet and brush lightly with olive oil.
  2. Toast the bread in the oven for 8–10 minutes, until golden and crisp.
  3. In a bowl, toss chopped tomatoes with 1 tablespoon olive oil, salt, pepper, and a few torn basil leaves. Set aside.
  4. Once the toast is out of the oven, rub each slice with the cut side of a garlic clove.
  5. Gently tear the burrata and place a portion on each toast slice.
  6. Spoon the tomato mixture over the burrata, then top with more fresh basil.
  7. Drizzle with olive oil or balsamic glaze, and serve immediately.
