Buffalo white bean tacos are a bold, plant-based spin on classic buffalo wings, featuring creamy white beans tossed in tangy buffalo sauce. Tucked into soft tortillas and topped with crunchy slaw, avocado, and optional ranch drizzle, these tacos are quick, easy, and full of flavor.

Ingredients

  • 1 (15 oz) can white beans (cannellini or great northern), drained and rinsed
  • 1 tbsp olive oil or butter
  • 1/4 cup buffalo sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 6 small corn or flour tortillas
  • 1 cup shredded lettuce or cabbage
  • 1 avocado, diced (or 1/2 cup guacamole)
  • 2 tbsp crumbled feta or blue cheese (optional)
  • 2 tbsp ranch or vegan ranch dressing (optional)
  • 2 tbsp chopped green onions or cilantro (optional, for garnish)

Instructions

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add the drained beans and gently mash about half of them with a spoon or fork.
  3. Stir in garlic powder, onion powder, salt, pepper, and buffalo sauce. Cook for 3–5 minutes until heated through and thickened.
  4. Warm tortillas in a dry skillet or microwave.
  5. Spoon buffalo bean mixture into each tortilla.
  6. Top with shredded lettuce or cabbage, avocado, optional cheese, and a drizzle of ranch dressing.
  7. Garnish with green onions or cilantro and serve immediately.

Notes

  • Mash more or fewer beans depending on your preferred texture.
  • Add shredded carrots or sliced celery for extra crunch.
  • Make it vegan by using oil, skipping dairy toppings, and using vegan ranch.
  • Turn it into a burrito or taco bowl by adjusting the format.
  • Store the bean filling separately from toppings for up to 4 days.
