A light, refreshing, and comforting lemon dill chicken soup made with tender chicken, fresh herbs, and bright citrus flavors.

Ingredients

  • 2 chicken breasts or thighs
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh dill, chopped
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup rice or orzo (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté the chopped onion until soft.
  2. Add garlic, carrots, and celery, and cook for a few minutes until fragrant.
  3. Pour in chicken broth and add the chicken. Simmer until the chicken is fully cooked.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add rice or orzo if using, and cook until tender.
  6. Stir in lemon juice and lemon zest, then season with salt and black pepper.
  7. Add chopped dill just before serving and mix well.
  8. Serve warm and enjoy.

  • Add spinach or kale for extra nutrients.
  • For a creamier version, stir in a splash of cream at the end.
  • Quinoa can be used instead of rice for a different texture.
